Marissa Guggiana has just finished her first book, Primal Cuts: Cooking with America's Best Butchers. Part cookbook and part love letter to America's whole animal butchers, it is a paean to the resurgence of a skill vital to sustainability. Of course, Gerrit van den Noord, Sonoma Direct's butcher, is featured in its pages.
